Penne with tomato sauce and cheese

I used whole wheat pasta because it helps satiety and doesn't spike blood sugar. Of course, you can change the amounts of vegetables I used or even add your own favourites.

  • 320 γραμμάρια πέννες ολικής αλέσεως
  • 300 γραμμάρια ντοματίνια
  • 1 τεμάχιο φρέσκο κρεμμύδι
  • 240 γραμμάρια κατσικίσιο τυρί
  • 8 κουταλάκια του γλυκού ελαιόλαδο

  1. I boil the penne for 11 minutes in salted water and after they are ready, drain and set aside

  2. In the pyrex I place the cherry tomatoes and the chopped spring onion

  3. Pour the olive oil and herbs on top. I preferred oregano, pepper and a bit salt

  4. I stir to get the olive oil everywhere

  5. I place my cheese in the middle of the pyrex

  6. I bake at 180 degrees Celsius, in the air, for 15-20 minutes

  7. I take it out of the oven and mix my melted mixture well to make a nice sauce

  8. I drop my pennies on top and do a final stir

The fresh onion gives an incredible flavor to the dish! Because of the vegetables in the serving, you'll fill up and enjoy this pasta like no other!
